Wow it’s been a minute since we’ve done a blog post! At long last we have a post for you… one we hope you will love since it contains: FOOD! Our annual recipe swap is always such a fun meeting. It’s a great time to sit back, enjoy food and conversation, and of course to come home with a few new recipes to add to your family’s “rotation.” You can download all the recipes HERE.

Just in time for holiday parties, we have recipes for dips and sides galore:

Slow Cooked Chicken Cacciatore (Sicilian-Style)

This recipe can be made quickly or slowly, depends on what you have time for.  Either way it is amazing, and one you will love.  This recipe is for the slow cooked recipe.  You can adapt this recipe to be cooked in a crock pot by thickening the sauce at the end of the cook time while the meat is being removed from the bone.


  • 1 Tbsp Butter
  • 1 Lg. Onion, chopped
  • 1 Lg Bell Pepper, sliced thin (optional)
  • 1 Clove crushed garlic
  • 2 (14.5 oz) Cans diced tomatoes drained-reserve the juice. Fresh roasted and chopped tomatoes will work too-about 4-6 depending on size. Can also use 8-10 oz dried tomatoes chopped. (Don’t use “in-oil” dried tomatoes)
  • 1 C Burgundy wine (any white or red will work too)
  • 1 1/2 Tbsp Italian Seasoning (dry)
  • 1 tsp Salt
  • 1 tsp ground Black Pepper
  • 1/2 tsp Garlic salt or an additional 1-2 cloves of garlic chopped and 1/2 tsp salt
  • 1 Whole Chicken quartered**
  • 2 Tbsp All-Purpose flour
  • 1 (16 oz) package of spaghetti, fresh pasta or home-style egg noodles

Directions for Slow-Cooked Chicken Cacciatore: (2 hours 25 minutes)

In a large stock pot, melt butter and saute onion, bell pepper and garlic until softened (about 3 minutes). Add wine, Italian Seasoning, S&P, and garlic salt. While stirring, cook until ingredients become a low boil.  Reduce heat to med-low, add the chicken and cook until the meat is tender enough to fall of the bone about 1 1/2 hours. Remove the bones and skin from the chicken, return the meat to the pot.

Heat 3/4 Cup of reserved liquid from tomatoes in saucepan or microwave until just warmed, stir in the flour until mixture is thick and blended well.  Add mixture to stock pot and stir in until completely incorporated and the mixture begins to thicken.  Remove from heat and allow to sit about 15 minutes.

While the chicken and sauce are resting, Cook pasta according to package directions.  Top pasta with chicken and sauce and enjoy!

Burritos on the Go

Many of us are busy, chasing after our children and have endless chores and our long to do lists that making lunch or dinner sometimes slips through the cracks.

Preparing a bunch of these easy burritos not only to eat for a meal but to also have extra that can be stored in the freezer to pull out on such occasions is just what we need to feed our families on the crazy days.


  • 6 small to medium tortillas.  Food for Life Ezekiel Sprouted Grain Tortillas are recommended.
  • 1 can of Black Beans drained and rinsed
  • 2 cups Salsa or homemade salsa
  • 3 ounces of raw goat cheese or another type of a soft cheese (ie. Monterey Jack)
  • chilli powder to taste
  • ½ of an onion chopped
  • optional toppings: avocado, romaine, sour cream, lime wedges


  1. Place tortillas on top of parchment paper lined aluminum foil
  2. Place ¼ cup of black beans on each tortilla
  3. Sprinkle chili powder on top of black beans (1 to 2 shakes)
  4. Add about a tablespoon of onion on top of beans
  5. Top each burrito with one tablespoon of salsa
  6. Top each burrito with a handful of cheese.
  7. Roll and wrap each tortilla tightly.
  8. If eating later: store burritos in a ziplock bag in the freezer until ready to use.
  9. If eating now: Pre-heat oven 375 degrees and then pop burritos in oven on a rack.
  10. Cooking time varies: fresh burritos take 10 mins, defrosted burritos take 20 mins, and frozen burritos take 30 mins (of course a microwave would be faster but it turns out better in the oven.
  11. Serve with avocado, romaine, sour cream, lime wedges and/or more salsa

You won’t regret making these since they are super tasty and healthy!

Homemade Chocolate Sauce

We all love chocolate and better yet, we all love having chocolate with out additional ingredients that are unnecessary or that costs more than necessary.  Making homemade chocolate sauce is not only inexpensive (costs less than even buying pre-made store brand), but it the ingredients are controlled by YOU.  This recipe takes less than 10 minutes to pull together and is well worth it.


1 1/2 C Sugar

3/4 C Unsweetened Cocoa

1 C Water

dash salt

1 tsp Vanilla


In a sauce pan, mix together all of the dry ingredients, add water and bring to a boil.  Turn heat off, add the vanilla and pout into a storage container. Glass is best, or you can pick up a squeeze bottle at a kitchen store or dollar store.

You won’t regret making homemade chocolate sauce b/c not only are you saving money, but your are able to control the amount of sugar you add to the sauce, with out the added unnecessary ingredients.

Caramel Sauce

This Caramel Sauce is so super easy and perfect for the holidays, and the best part, you practically don’t do a THING:


-14oz Can Sweetened Condensed Milk


Place ENTIRE unopened can into crock pot, cover completely with water and cook on low for 6 hours. Open can and it’s done.

Could it get any easier than this?? Enjoy this on Cheesecake, drizzled on cobblers, pies, for dipping apples as an appetizer. The uses are endless, just enjoy!
